A Very Harry Weekend

Friday night I went and saw the final installment of the Harry Potter movies with my sister. It was quite delightful (although, as a fan of the books, I have my complaints). We also went back and watched movies 5, 6 and 7 part 1. So all in all it was a weekend that called for British-themed food and drinks. We found a great blog with recipes for mixed drinks for some of the major Harry Potter characters (we tried the Neville Longbottom). For dinner we made a delightfully named recipe – Bubble ‘n Squeak – and broiled tomato wedges. It was tasty, easy and quintessentially British. Probably better for a cold fall night, but I thought I’d share the recipe now.

Unfortunately Della's camera was acting a bit wonky (it ate a funny whelk?), so these pictures are quite strange, but I wanted to give you the gist

Bubble ‘n Squeak
Serves 4

2-3 medium potatoes, baked and sliced thinly (after letting cool)
1/2 medium head of cabbage, sliced into strips
1 medium onion, chopped
2 tablespoons butter
1/2 teaspoon paprika
Salt and pepper to taste

First off, try not to overbake the potatoes as you don’t want them to be mushy. If you’re crunched for time you can even microwave them for a few minutes until a fork can stick into them fairly well. Cook the cabbage in a pan with a little bit of water until tender. Drain and set aside. Melt the butter in the pan and cook the onion until browned and soft. Add the potato, paprika, salt and pepper and stir. Let cook until the bottom parts are browning and then try to mix the top towards the bottom and get that browned. Mix in the cabbage and cook one or two minutes longer. If you want to be less British, but more healthy, you can use olive oil instead of butter.

Broiled Tomato Wedges

1 medium tomato, cored and cut into thick wedges
1 tablespoon olive oil
Salt and pepper to taste

Pre heat the broiler and position the oven rack close to the heat source. Cook the tomatoes for two to three minutes (until starting to bubble).
